ESPRESSO tonica

Ingredients

1oz / 30ml Navy Strength Gin

1oz / 30ml A LA MODE Espresso

0.5oz / 15ml Orange + Lemon Oleo Saccharum Syrup

2.5oz / 75ml Mediterranean Tonic (or other quality tonic water)

3 drops / 0.5ml Saline Solution (1:4, Salt:Water)

METHOD

Combine Gin, Espresso & Oleo with a splash of tonic water in a glass, stir to combine. Filled the glass with ice then carefully top with tonic water. Lift ice with a bar spoon to combine and preserve bubbles, garnish with pink grapefruit wedge.

For the Orange + Lemon Oleo, wash then zest skin of both citrus and mix thoroughly with 4oz / 120g white sugar.Leave overnight in sealed container in fridge. The following day, juice the citrus and weigh resulting juice. Add additional sugar if juice is more than 4oz / 120g or some water is less, so that sugar and liquid are equal by weight. Fine strain syrup, transfer to a bottle, put a label on it and store in fridge.
